Chicken Corn Chili

My friend and role model, Lee Anne (aka Super Mom and Friend if you ask me), passed on this recipe to me almost 3 years ago. I made it yesterday and it was super dooper yummy, if I do say so myself. And easy.. which makes it even yummier. So, I thought I would pass it along. It is the perfect meal for a cold winters day.

2 cans chicken broth

2 15oz cans of Northern beans

2 cans white corn

1 can diced rotel

1 can diced green chiles

2 teaspoons lemon pepper

2 teaspoons cumin

1 teaspoon minced garlic

3 Tablespoons lime juice

1 medium onion – chopped *can be omitted*

4 cooked chicken breasts chopped - I simply cook mine in the bottom of my stock pot in some olive oil before I dump everything else in.

Combine all ingredients, bring to a boil, reduce heat and let simmer for at least 45 minutes. Can be done in crockpot.

Our church had Fall Festival here at our house couple weeks ago. Someone had brought WHITE Chili. A first for me and I fell in love with it(ate 3 bowls). This sounds even better with corn in it. Thanks, can't wait to try it, ggma
